Easiest Peanut Sauce

I actually made this peanut sauce three different times last week because I couldn’t get enough! It’s perfect on top of fresh green salads, rice noodles and veggies, along side spring rolls, or my favorite- just drizzled over plain blanched veggies and cubed tofu. This sauce is so easy with just five ingredients, but so full of flavor that you may be licking the spatula to get every last bit! My advice: make a double batch.

Makes one delicious serving

Ingredients

  • 1/4 cup creamy peanut butter (make sure the only ingredients are peanuts and salt)
  • 1 Tablespoon of tamari
  • 2 Tablespoons of sweet chili sauce
  • 2 Tablespoons of rice vinegar
  • 1 Tablespoon of water

Combine all ingredients in a high power blender. Blend on medium high for about 1 minute, stopping half way to scrape down the sides with a spatula. Enjoy!
